allergy-friendly spicy garlic chicken

Comin at ya with a recipe that is free of the top 8 allergens, full of flavor, and easily customizable. Add whatever your favorite vegetables or grains are on the side--I went with brown rice and broccoli but you do whatever you want! If you are plantbased then you can swap out the chicken for Gardein's vegan chicken strips or tofu. So many options! So yum!


Total Time: 30 minutes

Makes 3-4 Servings


Ingredients:

-1 package boneless chicken thighs (mine was 1.83 lbs)

- 1 1/2 cups of brown rice/grain of choice

-3 cups of steamed broccoli florets (I microwave mine in the bag it came in for 2 minutes because I'm lazy but you do you)

-1 red bell pepper

-1/4 red onion diced

-1 tbsp olive oil

-1 tbsp green onion

chicken marinade/sauce:

-4 tbsp rice vinegar

-2 tbsp chili paste (add more if you want more heat)

-2 tbsp minced garlic

-salt to taste

-3 tbsp water

-1 tbsp maple syrup

-1/4 cup coconut aminos as a substitute for soy sauce (Bragg’s coconut aminos can be found almost everywhere/on Amazon) *but if you’re using soy sauce, leave out the salt!!

-1 tsp cornstarch (unless you have a corn allergy)


 

Recipe:

1. In a small bowl, combine the rice vinegar, chili paste, minced garlic, salt if needed, water, maple syrup, coconut aminos, and cornstarch. Mix well and set aside

2. Cut up the chicken into bite-sized pieces and put into a large bowl

3. With clean hands, pour half of the marinade over the chicken and mix well with a spoon to get the chicken evenly coated

4. To a hot pan on medium heat, add olive oil. Once hot, add the red onion and red bell pepper. Cook until the red onion begins to turn translucent

5. Add the marinated chicken to the pan and cook, stirring often, until the chicken is well-cooked (about 10-12 minutes)

6. Add the rest of the marinade to the pan and stir well to coat the chicken, cooking until the marinade thickens on top of the chicken

7. Steam broccoli + cook rice according to package instructions. I microwaved my broccoli florets in the bag they came in for 2 minutes (I prefer mine on the crunchy side)

8. Add the chicken to a bowl with the steamed broccoli and rice and garnish with green onion
