healthy spaghetti squash w/ turkey bolognese

I love pasta. I love bread. But the truth is, I've learned that those types of carbs aren't the greatest for my body type and the fitness goals I have for myself. I still eat noodles and bread, don't get me wrong, but I am always looking for healthier alternatives. Spaghetti squash is one of my favorites--it's healthy and delicious. The hardest part of this whole recipe is cutting the damn squash open, after that you'll be golden I promise you. This recipe is great for serving a family or meal prepping as it serves 4-5. In addition, this recipe is free from the top 8 allergens--no milk, eggs, soy, shellfish, fish, treenuts, peanuts, or wheat! It's lit!


Total Time: 55 minutes

Ingredients:

-2 spaghetti squashes

-1 package of ground turkey (can also sub in ground chicken/ground beef/veggie ground round)

-5 cloves of garlic (minced)

-1 yellow onion (diced)

-8 oz cremini mushrooms (chopped)

-1 can of crushed tomatoes (28 oz)

-1 can tomato paste

-basil (optional)

-2 tbsp olive oil

-2 tbsp salt

-2 tbsp pepper

-2 tsp oregano

-1 tsp parsley

-1 tsp cayenne pepper

-2 tsp maple syrup (optional)


 

Recipe:

1. Preheat oven to 415 Fahrenheit & cut both squashes in half, cutting off the ends and scooping out the seeds inside

2. Drizzle the insides with 1 tbsp olive oil and sprinkle w 1 tbsp salt 1 tbsp pepper. Put on a baking tray face down in the oven for 45 minutes

3. Meanwhile, cut up the onion, 5 cloves of garlic, mushrooms, and basil

4. Heat up 1 tbsp olive oil over medium heat and add the chopped onion, garlic, and mushrooms

5. Add the oregano, parsley, thyme, salt, pepper, and cayenne

6. Once the onions start to turn translucent, add the ground turkey and don't touch it for a couple minutes as it cooks

7. Break it up with your cooking utensil and cook until browned

8. Add crushed tomatoes, tomato paste, 2 tsp maple syrup, and chopped basil

9. Bring to a full boil then bring to a simmer for 30 minutes

10. Once spaghetti squash is done, let cool out of oven and scrape insides gently with a fork to create the "noodles"

11. Spoon the bolognese over the spaghetti squash and garnish with basil
